If a fridge is capable of changing what side it opens on, changing it won’t void the warranty.
A lot of fridges are made to go both ways. You have to attach the handle and the hinge when you get it. A lot of fridges will have two plugs on the other side to cover the unused bolt holes

That being said, if I knew who did it because of a long-standing tradition of mutual harmless pranks, or something, I’d probably be amused. But still a little bit annoyed.
Yes, I would notice, and yes, I would be really fucking annoyed. I swapped the fridge door to the way it is so that I can turn from my stovetop and open it with my dominant hand. Fittings were worn and I barely made it work without running something, so changing it for the prank and then again to correct it would probably damage it for good.
Good pranks should not require significant work to undo.

I have a fridge with the big single door and the drawer freezer at the bottom. I can’t say for sure which side the handle is on from memory, so maybe that prank would work.

I’d notice it because of muscle memory. Then get puzzled for five seconds, and then think “ah! So that’s what’s happening…”
As long as the person undoes the swap afterwards I’d just find it fun.
